Barbecue rubs, especially gourmet varieties, are becoming very popular. There are now more than 1000 different varieties available. The majority of them are gourmet varieties made and marketed by very small companies. Even most large grocery stores will have from 25 - 50 different ones available.

A barbecue rub is a prepared mix of ingredients consisting of herbs, spices, vegetables and liquids that is "rubbed on" the meat to be cooked prior to the start of the cooking process.

Barbecue rubs are compared similar to the way wine experts compare fine wines. Just as the same grape will vary when used in one wine versus another, each is created in a special way by its creator. The consumer barbecuer makes his own decision.

There are many cook off contests held all across the US. Many of them will be associated with Fairs or Festivals. Many of the manufacturers will participate in these contests hoping for a "Best In Show" to use to promote their products.
