• Fire Pan • Water Pan • Cooking Rack The water pan sits between the fire pan and cooking rack and is used to regulate the temperature while adding moisture to the cooking process. Offset smokers are larger and a more sophisticated type of smoker that is also usually more expensive.An offset smoker consists of three parts:
• Fire Box • Lateral Smoking/Cooking Chamber • Chimney The heat and smoke from the fire box are deflected into the horizontal cooking chamber and then finally escape through the chimney. Offset smokers are usually larger and used for cooking larger portions of meat. Most large smokers are of the commercial variety. A more convenient solution is an electric smoker. Instead of tending the fire, you can set the temperature gauge as you do for your oven, allow time to heat up and you are ready to go. Most electric smokers have the ability to add wood chips for that smoked flavoring. There is virtually no clean up and the electric smokers work great.
